Portuguese Wanderlust & Cuisine
A Fábrica's cuisine is 100% Portuguese, but not limited by our its humble borders... Portugal has the oldest borders in Europe and was the first sea faring European country. Sailors, explorers and adventurers travelled all over the globe and proudly bought back exotic new flavours and left traces of their own - 'tempura' batter can be linked to Japan and sampled at the Fabrica de Santiago, just choose the 'peixinhos da Horta' - translated as 'little fish from the vegetable garden' - or simply, green baby string beans in tempura batter.
From Angola, Mozambique, the sweet and gentle islands of Cabo Verde to Goa in India and China´s Macau and finally, to the big samba swinging beauty that is Brazil. If you are looking for a great Bacalau dish it's here, try our wonderful Mozambican king prawns or the Goan curry.
Lisbon's favorite dishes are also well represented: ameixojas a Bulhao Pato, fresh grilled fish, great grilled octupus with sweet potato and of course, a 'bitoque': just a great steak with an egg on top and home made potato crisps, jazz it up with pepper sauce or a local favourite, mustard sauce.
If you like to eat light, beautiful salads with warm grilled vegetables are coming this winter as well as hearty soups and of course, Chef Robalo's tasting menu.
